Oatmeal Pancake Mix
Ingredients
Mix :
- 4 cups old-fashioned oats
- 2 cups all- purpose flour
- 2 cups whole wheat flour
- 1 cup packed brown sugar
- 1 cup instant nonfat dry milk
- 3 tablespoons baking powder
- 2 tablespoons ground cinnamon
- 5 teaspoons salt
- 1⁄2 teaspoon cream of tartar
- 2 eggs
- 1⁄3 cup canola oil
- To prepare the mix, combine all of the ingredients in a large bowl; blend well.
- Store in a sealed gallon- sized plastic storage bag or airtight container.
- To prepare the pancakes, beat the eggs in a large bowl.
- Gradually beat in the canola oil.
- Alternately add 2 cups pancake mix and 1 cup water to the mixture. Blend well.
- Preheat and oil a griddle. Using a 1⁄3- cup measure, pour the batter onto the griddle.
- Cook until bubbles form around the edges; turn and continue to cook until done.
- Repeat with the remaining batter.
