Spicy Hot Chocolate
Ingredients
- 6 cups whole milk
- 1 cup grated panela
- 4 (3-inch) cinnamon sticks
- 1⁄ 8 teaspoon crushed hot red chile flakes
- 4 ounces bittersweet chocolate (preferably 70% cacao), finely chopped
Cooking Instructions:
- Combine the milk, panela, cinnamon sticks, and chiles in a medium-size saucepan.
- Cook over low heat, stirring occasionally, until bubbles form around the edges of the pan.
- Remove from the heat, cover, and let stand for 20 minutes.
- Reheat over low until very hot. Remove from the heat.
- Add the chocolate and let stand for a few minutes.
- Whisk until the chocolate is smooth.
- Strain through a wire sieve into cups and serve immediately.
