Double Chocolate Frosting
Ingredients
- 8 ounces unsweetened chocolate, chopped
- 7 tablespoons (1⁄ 2 stick plus 3 tablespoons) unsalted butter, at room temperature
- 3 tablespoons Dutch-processed or natural cocoa powder
- 3⁄4 cup heavy cream
- 2 teaspoons vanilla extract
- Scant 1⁄ 8 teaspoon fine sea salt
Cooking Instructions:
- Melt the chocolate and butter together in the top part of a double boiler set over hot, not boiling, water, stirring occasionally.
- Transfer to a medium-size bowl and let cool slightly.
- Sift together the confectioners’ sugar and cocoa.
- Add the cream, vanilla, and salt to the melted chocolate mixture.
- Using an electric mixer at low speed, beat the mixture until combined.
- Gradually mix in the confectioners’ sugar mixture, mixing until the frosting is smooth.
- Increase the mixer speed to medium and beat briefly until the frosting is fluffy.
- Use immediately.
