Double Chocolate Frosting Recipe


Double Chocolate Frosting

Ingredients
  • 8 ounces unsweetened chocolate, chopped
  • 7 tablespoons (1⁄ 2 stick plus 3 tablespoons) unsalted butter, at room temperature
  • 3 tablespoons Dutch-processed or natural cocoa powder
  • 3⁄4 cup heavy cream
  • 2 teaspoons vanilla extract
  • Scant 1⁄ 8 teaspoon fine sea salt
Cooking Instructions: 
  1. Melt the chocolate and butter together in the top part of a double boiler set over hot, not boiling, water, stirring occasionally. 
  2. Transfer to a medium-size bowl and let cool slightly.
  3. Sift together the confectioners’ sugar and cocoa. 
  4. Add the cream, vanilla, and salt to the melted chocolate mixture. 
  5. Using an electric mixer at low speed, beat the mixture until combined. 
  6. Gradually mix in the confectioners’ sugar mixture, mixing until the frosting is smooth. 
  7. Increase the mixer speed to medium and beat briefly until the frosting is fluffy. 
  8. Use immediately.
