Country Cabbage with Buttery Crumb Topping


Ingredients
  • 1 small cabbage or 1⁄2 large cabbage (about 11⁄4 pounds total), chopped
  • 1 cup chopped onions
  • 3⁄4 cup (11⁄2 sticks) butter or margarine, melted
  • 1⁄4 teaspoon pepper
  • One 10- ounce can cream of chicken soup
  • 1⁄4 cup mayonnaise
  • 1 cup shredded Cheddar
  • 1 sleeve butter crackers (about 34 crackers), crushed
Cooking Instructions: 
  1. Preheat the oven to 350°F.
  2. Place the cabbage in a greased 9- inch square baking dish and sprinkle evenly with the onions. 
  3. Pour 1⁄4 cup of the melted butter on top and sprinkle with the pepper.
  4. Combine the soup and mayonnaise in a medium bowl; mix well. 
  5. Spread evenly over the cabbage mixture.
  6. Mix the remaining 1⁄2 cup melted butter, the Cheddar, and crushed crackers in the same bowl. Sprinkle the cracker mixture on top of the cabbage mixture.
  7. Bake, uncovered, for 45 minutes, or until golden and bubbly.
