Ingredients
Dressing:
- 1 cup olive oil
- 2 1/3 cup red wine vinegar
- 1 clove garlic, slightly broken
Salad:
- 2 cans cannellini beans
- 2 red onions, chopped
- 1 bell pepper
- Dressing: Mix all ingredients together and let set at room temperature to blend flavors.
- Salad: Drain 2 cans of cannellini beans and rinse under cold water.
- Place in bowl and add 2 red onion chopped, 1 bell pepper cut in small pieces and some minced parsley.
- Add the dressing and adjust the salt and pepper.
- Add a little more oregano, if desired.
