Morning Oatmeal Bowl
Ingredients
- 11⁄2 cups apple juice
- One 7-ounce package mixed dried fruit
- 1⁄3 cup packed brown sugar
- 1⁄2 teaspoon ground cinnamon
- 2 pears, cored and chopped
- 21⁄2 cups milk
- 1⁄2 teaspoon salt
- 3 cups quick- cooking oats
- Two 6- ounce containers vanilla yogurt
- 1 cup granola
- Combine the juice, dried fruit, brown sugar, and cinnamon in a saucepan. Bring to a boil. Reduce the heat and simmer, covered, for 20 minutes.
- Add the pears and cook, covered, for 10 minutes. Cool, drain, and discard the cooking liquid. Set aside.
- Bring 21⁄2 cups water and the milk to a boil in a saucepan; add the salt and oats. Reduce the heat to medium; cook for 1 minute; stir.
- To serve, spoon the oatmeal into 6 cereal bowls and top each with the fruit mixture, yogurt, and granola.
