Irish Soda Bread


Irish Soda Bread

Ingredients
  • 5 cups all- purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 11⁄2 teaspoons salt
  • 1⁄2 cup (1 stick) cold unsalted butter, cut into 1⁄4- inch cubes
  • 21⁄2 cups raisins
  • 3 tablespoons caraway seeds
  • 21⁄2 cups whole buttermilk
  • 1 egg, beaten
Cooking Instructions: 
  1. Preheat the oven to 350°F. Grease two 9 × 5- inch loaf pans.
  2. Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl. 
  3. Cut in the butter, using two knives or a pastry blender, until the mixture is the texture of cornmeal.
  4. Add the raisins and caraway seeds; mix well. 
  5. Add the buttermilk and egg and stir until just blended.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 50 minutes, or until golden. 
  8. Cool on a wire rack for 10 minutes before removing from the pans to cool completely.
