Mexican Pork Roast


Mexican Pork Roast

Ingredients
  • 6 canned or dried red chilies
  • 3 cloves garlic for sauce
  • 1 tbsp. crushed oregano
  • 16 oz. Coca Cola
  • 1 (3 1/2 lb.) pork loin roast
  • Salt & pepper
  • 4-6 cloves garlic for stuffing roast
  • 3 tbsp. vegetable oil
Cooking Directions
  1. If using dried chilies, boil in water and let stand until soft; drain. 
  2. Remove stem, seeds and veins; then process with garlic, oregano and 4 ounces of Coke in food processor. 
  3. Salt and pepper roast. 
  4. Make slits in various places and insert garlic cloves.
  5. Brown roast on all sides in oil; place roast in baking pan. 
  6. Spread chili mixture over meat and pour on remaining Coke. 
  7. Bake at 350 degrees for 2 1/2 hours. 
  8. Let meat stand 15 minutes before serving.
